Blueberry Buckle

Okay, so I have absolutely no idea where this Blueberry Buckle recipe originated from. It could have been in a cookbook, found online, or borrowed from a friend. All I know is this recipe is absolutely delicious and I am not the originator of the recipe!

What is a Buckle?

A buckle is a coffee cake! A little bit thicker than a muffin with a delicious crumb topping. A mega delicious crumb topping made of butter, sugar and flour. The term buckle comes from the “buckling” or cracking of the topping while the cake bakes and rises. Thank you google for a quick answer!

We make this Blueberry Buckle once a year at school and I am always hoping an praying for leftover blueberries so I can make one myself! This is a great recipe for Sunday bunches, holiday meals, or just something yummy on to have on hand!

Tips and Tricks:

  • Do NOT over mix the batter! Quick breads get tough when over mixed
  • I like to make in a glass 7×11 pan so the blueberry buckle is not at thick, but really use whatever you have on hand!
  • Fresh or frozen blueberries will work! Throw those frozen berries right in to the batter.
